The grapes come from vineyards that are 2,700 ft. in elevation with clay-limestone soils. They are oriented to the southwest, and planted in the traditional vaso and cabeza systems. Yield: 4,225kg/Ha (2.92T/acre). Harvested second week of September.

Maceration: Cold soaked 24 hours.
Fermentation: Settled; temperature control at 16º C. Fermented with selected yeast (Saccharomyces bayanus).
Stabilization: Cold stabilized.

Tasting Notes: Pale glazed cherry in colour, clean and brilliant. Aromas of wild strawberries , raspberries with light notes of anise. On the palate this is a well balanced wine with light tannic notes, smooth acidity, red berries and a touch of orange zest on the finish.

Recommended pairings: Salads, hors doeuvres, some fish and white meats (chicken, turkey) without excessive spices.
