Vineyards: Proprietary vineyards situated in Valdefinjas and Toro (Zamora) Average age: 15 - 65 years. Type of training: Head-trained in goblet. Average yield per hectare: (20 Hls./Hct.). Soil amendments: Organic material.

Harvest: Exclusively manual with rigorous selection of the fruit in optimal health and ripeness conditions at the vineyard and at the winery, by means of a sorting table.

Vinification: Traditional method, 100% de-stemmed, with light pump-overs during fermentation.

Fermentation: 8 days with 2 pump-overs daily. Traditional method, 100% de-stemmed, 26º - 28ºC

Maceration: Extended maceration on skins for 14 days with light pump-overs.

Malolactic Fermentation: In barrel, 30% new French oak.

Barrel Aging: In French oak Bordelaise style barrels for 12 months. Age of the barrels: 30% new French oak, 70% “1-wine” barrels.

Tasting notes: A full bodied dense purple coloured  wine with aromas of dark fruits and blackberries, cassis, liquorice, camphor and spring flowers leaf .The palate is full-bodied and lavish extract, all concealing of its French oak aging, this rich, full 2011 possesses velvety tannins as well as a long finish.  Enjoy for the next 10 years
