Veritas Winery was established in 1955 by Rolf Heinrich Binder. The winery tradition is now continued by Rolf and Christa, as brother and sister winemakers jointly awarded Barossa Winemakers of the year 2005. In 2005 on the 50th Anniversary, Veritas became Rolf Binder Wines.

Tasting Notes

Rich, ripe blend with the 40% Merlot softening out the back palate grip of the Cabernet Sauvignon. A powerful, deep, aroma varying from red berry fruits to black cherries and leads into a sweet, full bodied, intense, richly flavoured palate. Sourced from vineyards owned by the Veritas winery along the western side of the Barossa Valley.



The Cabernet Sauvignon Merlot is fermented in open fermenters. Selected Bordeaux style yeasts are added. The juice is pumped over twice daily resulting in maximum flavour, colour and tannin extraction with both the warm ferment and pumping over stabilising tannin structure. The Merlot was aged in shaven and three year old American oak. The Cabernet Sauvignon was matured in 15% New French oak, with the balance being three year old French oak. The wine was matured for 10 months. The Cabernet Sauvignon Merlot was bottled March 06.

Winemakers Comments

“A Cabernet made with a Shiraz mentality, easy to drink. A gentle wine on the palate that is backed up by full ripe fruit flavours of blackberry, cassis, plums and subtle oak. The tannins are soft and gentle and combine with the fruit to enhance the overall flavour of the wine resulting in a well balanced silky, smooth wine with all the components coming together in harmony” Rolf Binder
